This nature-related cookbook project was initiated at the Manoir Brulé Fishing Lodge in 1995 by the wildlife biologist David Craig who is also the founder, President and owner of Gesti-Faune Inc. At that time, the new chef, Jean-François Lacroix, was developing the gastronomic dining experience that has since become the pride of the Manoir Brulé. It was only several years later, January 2000, that the team of Christiane Gauthier, Paul-E Lambert and Jean-François Lacroix was formed and started to work on the book. The recipes and photographs were for the most part realized at the various Gesti-Faune Lodges. Gesti-Faune Inc. now operates several private high-class fishing, hunting and wildlife observation lodges in Quebec, Canada. The most prestigious of these, the “Manoir Brulé” is situated in the boreal forest just north-east of Quebec City and caters to a corporate clientele for customer entertainment, board meetings, team building and incentive programs. Craig, a passionate trout fisherman, hunter and nature lover, has been sharing that passion with Manoir Brulé guests for the last 27 years. The trout fishing is excellent and is a direct result of their biological expertise. For example, the construction of the “Invented River", resulted in a tenfold increase (300 to 3000) in the annual harvest of speckled trout in Lake Brulé ! Furthermore, the quality of this biological enhancement project was recognised by the Canadian Government in 2000, when Gesti-Faune was awarded Canada’s Recreational Fisheries Award. Gesti-Faune is now renowned internationally for their biological approach as well as for their gastronomic dining experience in the forest. Over the years, they have been awarded several Quebec Tourism Grand Prizes in recognition of outstanding services offered. The woodlands and lakes where their lodges are located have been gifted with an abundance of trout, moose, black bear as well as many other wild animal and plant species.
